I wish I could tell you what happened during your installation but I can't. The thing that makes this question the hardest type of question to answer is because the thing that caused this to happen did not occur naturally. It is what we refer to as "mechanic induced". Although you explanation of detail is good, it is just not enough. The instrument panel had to come out to do this job, a very complex undertaking with lots of wiring connections. Go over your work.
One armchair guess after looking at wiring diagrams. My armchair guess is that you left off a ground wire eyelet from under a bolt. The ground circuit that seems like would give problems between the headlight switch and speedo and tach function is G200, G200 is located by the air bag control module under the console. Did you take anything apart at or near the console?

    Quick flashing turn signal
Have 2005 Wrangler, quick flashing on left signal. Front and front bumper lights work. Rear tail light high intensity does NOT work for brake, hazard or turn. Low intensity normal driving light works. Changed bulb twice with known good bulbs, no effect.

Check any fuses and relays related to that light circuit. The wiring or harness leading to light could have a short, test for power at the harness that plugs into light.Check for corrosion in harness, light connector, and socket where bulbs go.If all lights are inside 1 housing and that housing has only 1 harness providing power to,its more than likely a fault inside the housing,if all of your other checks dont find find the cause

My driver's side seat is completely shot, is there a different option than Jeep seats?
We can not find any old jeep seats, because this is a frequent problem with jeeps and would like to find a different type of car that their seat would work in my jeep, it doesn't need to look good, it just needs to fit in the car and be mildly functional

Why do my windows fog up while my defrost is on and while the defrost is on it doesn't un-fog my windows?

Do you have settings to use outside air or inside air. The dial or button may have logo of car with arrow out side of car pointing into vehicle and car with two arrows in circle inside the car. This will select between using outside air or recirculate the cabin air for colder A/C. If you have it set to recirculate the inside air it will not remove the inside moisture which causes fogging. You should set controls to use outside air this will remove the moisture in the interior and defog the windows much quicker. If your A/C does not work then the defrost will not work as effectively.

I don't have this function in my car. An also when I do turn the heat on I smell coolant. On my way to work today the windows started fogging up again an my defrost isn't defrosting my windows, it makes it worse when I turn it on.

First check for burned out bulbs. If bulbs are good test the blinker switch. You most likely need a new turn signal switch.

I would also consider the possibility that it could be rusted away around the fire wall . Probably the same cowl -drain but I'm not familiar with the term. I don't have any idea how much it cost, but I would try clearing it my self if I had the problem.Maybe compressed air would do it if you have access to a compressor.Or try a strong vacuum cleaner if it is possible to open the area to get the hose close enough.

You will need a slender long shaft torx screwdriver and slide it in between the turn signal and the corner light from the front of the jeep.
