Why are my brakes soft when I step on them?

Because you most likely have not taken the brakes apart on a yearly
basis,to remove all rust & after cleaning & inspection of all brake components
& decide if any need to be replaced or machined, then followed by actually
using the proper lubricants were required, something seldom done or done

You need to flush brake fluid every 2 years or the inside of the system turns to
rust from moisture & many components are ruined & you have problems

A soft pedal is air in the system,so that had to be there in some amount for
a long time

Just having a vehicle sit,if outside, requires the above procedure to be done yet
again, all you will have is a rusty mess & brakes that don't work well & a not safe
to use

Saying you had no problem is only your perception of a symptom, not the actual
mechanical & hydraulic condition that may be there now
